Do I Change The Cooking Time?
I am cooking for a large group tomorrow and have 5 things that go in the oven, and only 2 ovens! So, I need some help.
If a recipe calls for baking something at 350 for 30 minutes, and I am making two batches, can I put both casseroles in the oven at the same time? If so do I need to adjust the cooking temperature or cooking time? I have convection ovens, if it makes a difference.

Make no adjustments. The temp will remain at 350 regardless of one or two batches…especially with the convection oven.
For convection ovens, no, keep the same time. In conventional ovens, the radiant heat is disrupted by having extra dishes, but the forced airflow in a convection oven prevents temperature “shadows”.
@Zendo Thank you that is wonderful news! Ugh! I think I need to make a schedule of when to put things in which oven…. why do I volunteer for these things?
@Harp Thanks!! What about this problem… when I set my ovens to convection, the temperature I type in is automatically lessened by 25 degrees ( I guess b/c most recipes are for conventional ovens). Do I change that or just keep it the same still?
Let it make its downward adjustment. The convective heat is more efficient at heat transfer, and that won’t change just because you’ve got a crowded oven. You’ll have too much exterior browning if you don’t let it compensate.
@harp Thank you SO much! I have been stressing all day about it and then I remembered something….. Fluther!
I agree. Let the oven adjust as per its normal usage.
When you bake cookies, do you raise the temp if you cook more than one cookie sheet at a time? I think not. And remember, it is always easier to undercook and then throw it back in and cook some more than it is to overcook!
@Zendo Good point about the undercook/overcook. I’ve never baked more than one of anything at a time (usually I just run both ovens, but now I know I don’t need to!)
