Interesting things to do in Syracuse, NY?

Will be there for a wedding and have some free time the day before the festivities. Anything interesting to see/do in or near Syracuse?

It depends on when you will be there. There is a great list of events and festivals on the official Convention and Visitors site.
As you will find, you will have to choose from antiquing, golf, museums, art galleries, wineries, a casino, shopping, a zoo, and many historical sites to visit.
