Do you have any recipes for keeping lemons?

I am making preserved lemons—the kind made by basically packing salt and lemons into a jar. I am looking for other things I can do with my bag-o-lemons and canning jars. I will need recipes! Preferably tried and true. What is your favorite way to keep lemons?

Lemon sweets , cook them in sugar and leave to set . You could dry the ;lemons dried lemons are great , especially in tea / or just plain hot water .

How about making a big batch of lemon curd? If you put this hot into sterilized jars it will keep like jam. Makes a great filling for tarts by itself or topped with meringue or raspberries. Or just use it as a spread for toast or scones.

@Harp: Yes please! I wasn’t sure on the shelf stability of it, but I adore lemon curd.

@La_chica_gomela: That would be amazing! I might go get more lemons just for that purpose.

There is also Lemon Marmalade or, as a variation, a marmalade that uses honey and lemons.

You can also squeeze them for juice and then freeze the juice in ice cube trays. Any time you need lemon juice for a recipe just get out a cube or two.
