Does anyone have a recipe for some sort of butternut squash sauce for pasta?

I’m having a dinner party tomorrow, and the main meal is a milk-braised pork shoulder over large, essentially polenta, squares. There will likely be at least one vegetarian, so I’m trying to find the recipe for some sort of “sauce” like dish featuring butternut squash and sage, which is a classic pairing, but will feel more like a main entree rather than a side dish, especially if poured over the polenta.

Thoughts? Should I puree the butternut squash, or would that be too soupy? Roast vs. steaming the squash? I’m really more of a meat person, but I hate stiffing the vegetarians at a dinner party.

I watched Rachel Ray make this one the other night. For veggie, use vegetable stock rather than chicken.

I’m a big fan of butternut squash sauteed with garlic and fresh sage leaves – put it over pasta with some good parmesan cheese, and it’s a great meal for any vegetarian. I don’t really have a recipe, since I sort of just throw it together each time, but here’s the basics:

Cube the squash and cook it most of the way, either roasting, steaming or just zapping in the microwave for a few minutes (depending on how much time and effort you want to put into it – when I’m in a hurry, I buy the already cubed squash from Trader Joe’s and microwave it). Once it’s almost soft enough to eat, sautee some minced garlic in olive oil, toss in the squash for a few minutes until it’s cooked through, and then add the sage leaves (either whole or coarsely chopped) for the last minute or two. Salt and pepper to taste, toss with your pasta and top with freshly grated parmesan.

It’s super-easy, and really tasty. Good luck!
