General Question

I need a sauce for my scampi and I don't have many of the essential basic ingredients for Tartare Sauce... what can i throw together that will do?

I was going to make a Tartare Sauce (as I don’t have the real thing) out of mayonnaise, crème fraiche, capers, gherkins etc but realised I don’t have any mayo…

I was then going to use salad cream instead but I don’t have any of that either (I know ..I’m useless…)

I have Hollandaise Sauce… I wondered if that would work…. on it’s own or maybe with something else??

I have plain old BBQ sauce and Tomato Ketchup… and I have lemon juice (thank god!) but it’s not the same without the Tartare Sauce is it…

I do have crème fraiche…

Any suggestions…

And no…I can’t go to the shop and buy anything else right now…

Do you have oil of some sort and some eggs? Google making homemade mayo.

Do you have horseradish to make cocktail sauce from the ketchup & maybe the BBQ sauce?

Nope no horseradish…. BUT!!! I do have eggs… and sunflower oil…..vegetable oil and groundnut oil… no olive oil though… which is simply shocking…can’t believe myself!! Which oil would be best?

I found this mayonnaise recipe which uses groundnut oil… all sounds Very fattening and complicated… but I might give it a try…

Mayonnaise is fattening – after all, it’s basically egg yolks and oil – but I’ve never known it to be complicated. All it is is rapid stirring.

@lynneblundell: the cool thing about making mayo yourself is you can add some flavoring if you like. Some people drizzle a bit of sesame, garlic or pepper oil and also dripping from other sauces or mashed pimento from inside stuffed olives, the drizzle from jars of herbed feta cheese cubes. Have fun :D

@laureth I usually buy extra light mayonnaise (which isn’t so fattening…albeit full of chemicals…:-/) I’m going to give it a go anyway!! xx Thank you all for your help xxx

Do a simple melted butter and fresh garlic sauce. You could throw some red pepper flakes in it as well.

Why tartare sauce with scampi? Lemon, olive oil and garlic!

Any oil you would use in a salad vinaigrette is suitable for home-made mayo. Really simple with a food processor.

it didn’t work…bloody thing won’t thicken… hmpf… they always make it sound so easy!!! I think I’ll go with the lemon, garlic, oil!! @pdworkin thank you…

@gailcalled I feel like a right nonse now…lynneblundell can’t make mayonnaise :-(

The trick is to dribble the oil in drop by drop.
