Does anyone have a good recipe for breading a mushroom prior to frying it?

I have two Portabella (sp?) ‘schrooms left over from Thanksgiving. I wanna fry them up, however, in the past when I’ve tried to bread them it’s like the coating just slips right off and makes a big, useless mess.

Any suggestions?

First, flour. Then, beaten egg. Then flour again, then egg once more, then Panko. Viola!

Last coat is Panko. (Japanese bread crumbs)

I don’t have Japanese bread crumbs! Can I just use flour?

I never had any of those ‘shrooms either. I like to grill portabellas- I rub some olive oil on the caps, grill ‘em gill side up, then flip & grill till tender. No breading.

@ccrow I only have two of them…wait. Do you mean on the grill or in the oven? I wouldn’t want to fire up the grill for two mushrooms!

Well, I meant the grill but I don’t know why you couldn’t broil them just as well. Don’t you have a nice steak to keep them company on the grill?? :-) Or some zucchini &/or eggplant if you’re vegetarian!
I’ve actually never tried breading any kind of mushroom…

LOL! No. All I have are two, kind-of- smallish ports that I don’t want to go to waste! That’s it! Well, I have peanut butter and jelly, too. And honey. And salsa and cheese. And some hamburger buns….what can you come up with from that??

I guess you could broil the portabellas & eat them on the buns, w/salsa & cheese… I’m not sure what to do w/the pb&j!!! :-D

@pdworkin Ahaa! Total Success! (But…I haveta ask…do you pro-chefs ever cook with the idea in mind of “What a mess I’m going to have to clean up??!!) But most excellent, thank you.

I am far from being a pro chef. I have fun in the kitchen, and people think my meals taste good, but my presentation sucks and my knife skills are mediocre. That being said, pro chefs have a staff. In our house my girlfriend and I cook and clean up together.

@ccrow Well, the ‘shrooms grew with the breading so they were a meal unto themselves!

@pdworkin I still think you should write a cookbook!

@pdworkin Well, thanks anyway. Solved an age on problem for me! Now I need to work on seasonings….almost lost the mushroom taste in the taste of fried flour. Ish!
