I have a question about a recipe I am making for dinner tonight ...

I am making meatloaf meatballs (basically meatloaf but smaller and cooler) and the recipe calls for 1lb ground beef, 2 spicy Italian sausages & 4 sweet sausages but I only have spicy sausages. What can I add to the meat to give it some sweetness? The other ingredients are red bell peppers, onion, garlic, eggs, breadcrumbs, parmesan, and parsley.

Increase the ground beef to equal the weight of the sweet sausages, or use ground pork or veal.

Wife suggests using a tablespoon of hot dog relish. it could happen!!

Get half an apple, chop it fine and mix it in with the other meats

interesting, i have none of those though, haha… i think ill just use less hot sausage.

i was thinking maybe a little honey, does that sound horrible?

“Sweet” sausages are not so much sugary as they are savory, but not “hot”. That’s why I suggested meat, not another ingredient.

Not honey I don’t think. If you’re careful you can cut back on the sausages, and use bread or breadcrumbs to bulk up the mixture. Too much though and you’ve irreversibly screwed it

I sometimes add brown sugar and/or applesauce to my meatloaf…yummy.

What @pdworkin says. “Sweet” Italian sausage isn’t really “sweet.” It just isn’t spicy hot. Just add a bit of hamburger meat and maybe a bit of extra basil and fennel seed.

I agree with @pdworkin – Just add more mince.

The most important thing you’ll have to do is adjust for the fat content of the sausage. Mince is less fat than sausage, so to get the right balance, try adding some bread crumbs to the recipe. The bread crumbs will hold on to some of the fat that would otherwise drain into the roasting pan, and help keep the meatloaf from getting dry.

You might also try topping the meatballs with a strip of bacon.

I always add breadcrumbs into my hamburger recipes.

You can add an egg yolk, too, for moisture.
