Does anyone have any good recipes for leftover turkey?
I love turkey, fresh from the oven, and carved in thick chunks.
However, after a few days I get fed up with eating it this way.
Does anyone have any recipes to use up the turkey?

My mom used to shred the meat up and throw it in spaghetti sauce for turkey spaghetti. You barely taste it that way, so it’s a good recipe if you’re sick of turkey.

I made turkey quesadillas after Thanksgiving. Cut up some onion and green pepper, saute in a bit of oil until crisp-tender. Add the turkey just to heat it through, then stir in a packet of fajita seasoning and however much water the packet directions say.
Meanwhile, heat up some tortillas. Serve it all with Mexican rice, sour cream, and cheese. It was so good, I’m doing the same thing with leftover chicken later this week!

Turkey and Rice Casserole
This was always my favorite: Cut-up pieces of white and dark meet turkey, stuffing, gravy and cooked white rice. The rice would be about half the volume of the casserole, and into that you mix the turkey, stuffing, and enough gravy to moisten it well, but allow it to keep its shape. (You don’t want it to be a gravy stew, in other words.)
Both of these recipes are very simple and allow a lot of experimentation and alteration—and they’re simple—and delicious.
