Moisture, humidity. Seal them in airtight container.

Because they are stored well out of my reach. Please correct this storage issue, and your chips won’t go stale.

What is it that happens to food when it becomes stale?

The cooking process basically eliminates all moisture from them. Absorbing humidity in the air once again causes them to get stale.

From answerbag:
They can be restored:

Step 1:
If you do have stale chips, you can revive them to their former glory. All you need is a microwave or oven. In a microwave, set for about 20 seconds and then let cool. An oven is only practical if you need to revive quite a few chips. In this case, spread them out on a pan and bake at about 350 degrees for about 5 to 10 minutes. Check frequently to make sure they don’t overcook. In the case of the microwave and the oven, let the chips cool before you eat them.

Moisture. When I lived in a very dry state chips seemed to last forever.

Not enough chemicals in them!

They can absorb moisture but many people don’t realize the oil can go rancid as well.

As to my post above I would think if resurrecting a 3.00 bag of chips is the focus of your activities though you may have bigger problems, like trying not to starve to death.
