Thinking about making it, but it sounds like just a bunch of baked vegetables thrown together on plate….

yes, if it is done right,
I have never baked vegetables, rather browned and sauteed them and finished them off by adding some liquid to the pan.

Sorry, but I think ratatouille tastes kinda phooey.
It can be wonderful or awful, depending on the cook
^^^ Thanks, I will keep this in mind. If it doesn’t come out good I’ll be sure to try it at a restaurant where it is made by a professional lol to give it another chance.
Personally, I am not a fan of eggplant so would go for sautéed zucchini, red peppers, onions and tomatoes only.
I love it, but I always saute everything, no baking.
It depends on what you like. Personally, I like it, but it’s much better in the summer with fresh vegetables.
Perhaps you live in the southern hemisphere, though, and it’s just the thing, this January day! :)
You really have to like eggplant. I do but my husband not so much. In addition to that, the olive oil and garlic are what elevate it above just plain vegetables. I serve it as a lunch dish in ramekins with melted cheese on top. Yum!
@laureth I guess I live in the southern part of the northern hemisphere (hawaii).
The dish is just the veggies w/ olive oil, garlic, parsley, and parmesan right?
@janbb I do like eggplant… alot! But bf not so much…..hm.
When I do it, it’s usually something like this. The tomatoes kind of dissolve and make it kind of saucy, and it’s good on/with mashed potatoes.
@laureth thanks for the link. I was gonna do it like this, but I think yours sounds better.
I love it, when it’s done right. Give it a try, I’m sure you’ll approve
You’d better believe it! Sautéed not baked though.
It’s apparently delicious, if it’s made by a talented rat.
It’s usually sort of a veggie mush, so it can be good with some meat and potatoes. On it’s own, nah.
Made it – it was good but not spectacular. Thanks for the replies everyone.
