Brandy Egg Nog
Type: Mixed drink
Primary alcohol by volume:Brandy
Served:“On the rocks”; poured over ice
Standard garnish:Nutmeg
* 4.0 cl (1.5 oz) Brandy
* 5.0 cl (2 oz) Milk
* 1.0 cl (2 tsp) Gomme syrup
* 1 egg yolk
Preparation: Pour all ingredients into shaker with ice cubes, shake well. Strain into a champagne flute with ice cubes. Sprinkle with fresh ground nutmeg.

Gomme syrup is an ingredient commonly used in mixed drinks. Like bar syrups, it is a sugar and water mixture, but has an added ingredient of Gum arabic which acts as an emulsifier. Gomme syrup is made with the highest percentage of sugar to water possible, while the gum arabic prevents the sugar from crystallizing and adds a smooth texture.
To make gomme syrup, bring sugar and water to a boil, then add gum powder dissolved in water. Strain for use.
I know that egg nog w/o the raw egg is only nog; but isn’t it considered risky to eat raw eggs these days?
they say to add Vanilla icecream to any recipe for that extra something.
