A guy would be Sir Job Sandy. What would a knighted person like, say, Mother Teresa or Jane Doe be called?

Dame. Like Dame Judi Dench.

The wife of a knight is a Lady; a female knight is a dame. Examples: Dame Judi Dench was knighted and Heather Mills was Lady McCartney.
@troubleinharlem: She gets called that a lot in movie billing these days. I love hearing it too because I think she’s a great actress and, honestly, I just enjoy the way it rolls off the tongue.
