How do you tweak the tumblr blog to your liking?

Such as how do I change the background and center the text?

I usually copy and paste the CSS into MacRabbit’s Espresso and then manually copy and paste into the Tumblr theme editor.

I’m not sure if there is a way of doing this without knowing CSS.
