Went to a French restaurant tonight and one of the beef/steak dishes was being served with a cow(? I presume) bone cut so you could scoop out the cooked marrow and eat it. Have you had something like this? What’s it like?

no, I was in the mood for something else
I tried it once, and it wasn’t very good. It kind of reminded me of how cat food smells.
@kevbo oh heh you had me curious
I’ve had it… it’s delish, very rich and tasty…. also probaly high in fat and cholesterol..
Get them from dishes like Osso Bucco, Peposo notturno and braised beef shank.
Sometimes you get it when you order osso buco. It seems a little featureless to me. Very prized in some circles because rich and mellifluous. I’ve been waiting a long time to use that word.
Damn, @njnyjobs, you aced me out on the osso buco reference.
@susanc, nice $10 word! I had to look it up, but the phone predicted it from “melli.”
@kevbo: the phone has a good sense of bone marrow’s texture.
Ugh, my husband likes it. Totally grosses me out when he eats it. He’ll eat about anything it seems (but not a fan of chocolate…such a weirdo).
I recall it being very rich and fatty, but quite tasty. It’s been awhile, but my grandmother prepared a beef, bean and barley dish which included marrow bones to provide flavor. I would get one of the marrow bones whenever she served it (other than my Mom, no one else was interested in what we both considered a prize). See ya…..Gary/wtf
Bone marrow on its own is a little too rich, but it’s great as a complement to a dish. Sometimes I make goat or lamb curry with meat that’s cut through the bone. When you cook everything together, the marrow cooks its way out of the bone and into the broth, which makes it thicker and richer.
Plain marrow by itself seems like something for hardcore carnivores. It’s very rich, meaty, and fatty.
Sure.
Before my teeth went bad, it was common to crack a fried chicken bone with my teeth and suck out the marrow. Don’t know where I learned it…never really even thought about it, but yes.
What’s it taste like?
(He asked for it…)
…It tastes like chicken…marrow…lol!
Is this unusual?
In Mexico as well as other Latin American countries it is served as a dish called “tuetano”.
Very rich but delicious.
Eww, sometimes when I have ribs the bone will be really soft because of it cooking for a long time. Sometimes I’ll accidentally eat the marrow and it makes me want to puke. It reminds me of sand, cat food, and pigs. Also sometimes the bone will turn into this jelly-like crap that is just as revolting…
My mother in law makes the best osso buco. I love it, but haven’t tried the marrow. She and my husband will scoop the marrow from the bones and spread it on a piece of bread. They swear it’s the best thing ever, but I can’t bring myself to try it!
my grandmother was Czechoslovakian and she used to boil these big soup bones (maybe to make stock for soup?) and she would scoop out the marrow and put it on a ritz cracker and i would eat it. that’s when i was little. if she were alive she would probably be appalled that some restaurants as mentioned above are serving it as a gourmet dish, and probably charging a lot of money for it. to me it tasted like warm beef flavored jelly. i liked it.
oh god i dont know why but it sounds so unappealing. eating whats inside the bone! its so dark and poreous.
@OuterHaven : it’s not dark and porous when it’s boiled. it’s soft and jelly-like, and light brown.
@jca oh, i was thinking of the chicken bone marrow whenever i crack the bone open. my mom sucks it out…...
Yum, osso bucco! I’m also fond of marrow tapped out from lamb shanks, especially dropped into soup.
I have a recipe for Marinara sauce that starts with beef and pork bones. The bones are cooked so that the marrow leaves the bones and is incorporated into the sauce. You wouldn’t know it to taste, except that the flavor is very hearty and thick.
I made Osso Bucco for dinner tonight. We had the bone marrow. It soaks up the sauce, and is very delicious. Most people think it’s the best part.
Yup, and it was disgusting.
Yes. It’s good, or can be. I don’t know about the specific recipe you mentioned.
When I was a kid, and we had big steaks for dinner, I would go like crazy after the marrow. It was delicious.
I ate the park’s bone marrow. They tasted like fat. Its yummy! :)
So, is the bone marrow the brown, sort of clear jelly stuff, or the spongy, fairly crunchy, porous, black-brown stuff inside the bone? What are they both called? I don’t like either anyways..
