What can I substitute for coconut milk in a thai peanut sauce?

I just went to the grocery and bought stuff to make pad thai. My recipe calls for coconut milk and I forgot to get any. Help me quick I am starving and want to get cooking so I can eat. I have canned condensed milk and regular skim milk. Any suggestions?

Cream. The condensed will substitute for it. Do you have any coconut essence?

Almond milk might do it.

This is no help right now, but I keep a large bag of unsweetened organic shredded coconut in the freezer. I also have several cans of coconut milk and several cans of organic chicken stock among the staples.

Keep in mind that any lime juice you use may have unfortunate effects on dairy milk.

Condensed milk could turn out VERY badly if it’s sweetened condensed milk. That’s sugary-sweet, almost like milk with corn syrup in it. Evaporated milk could do the trick, maybe?

Im still hungry. I used evaporated milk. I totally ruined one of my favorite dishes. I could only stand to eat a few bites then tossed the rest. My pride is hurt too. I thought I was a decent cook.

Perhaps it’s not that you lack skill as a cook, it’s that you were lacking a key ingredient. Programmers like to say, “Garbage in, garbage out.” Not that your cooking is garbage, but there’s not a very good sub for coconut milk.
