What are some favorite healthy snacks (vegetarian)?

What are some delicious, easy to make, healthy, and easily transported snacks? On weekdays I haven’t been eating during the day then eating a lot when I get home. I would like a variety of snacks to try that I can eat throughout the day. Lacto-ovo vegetarian.

fruit. maybe make a trail mix thing

Nuts are wonderful for snacking. A handful of almonds, walnuts or pecans.

Cheese, if you eat cheese.

Peanut butter on celery goes over big at our house
Also my family loves Kashi granola bars. It’s much less sweet than the other ones available, which is a big plus..

Some red pepper hummus with carrots and celery. Mmm.

Hummus and carrot sticks or whole wheat melba toast.
Home-made trail mix is great: Try unsalted almonds, dried cranberries, unsalted sunflower seeds, and lightly salted beer nuts shaken up in a bag = yummy.
Hard bolied egg (if you eat eggs)

Hummus with gluten free snack bread. Different bags of fruit, then you can chop them up for fruit salad. Tofu and lentils.

Garden salad and vegetable/fruit porridge.

Most health food stores sell bulk granola, usually quite a few different flavors. I like french vanilla or maple granola. Dried fruit works well, just watch the amount of sugar because it is dried.

weasels. I don’t have any. I haven’t made it to the store and now my stomach’s is growling. Its excellent stuff.

Edamame. I buy a package of frozen edamame and put a cup or so into a small plastic container, sprinkling a little salt in as I layer it, and then I microwave it for about a minute. Now I refrigerate it, and it’s a grab-and-go snack. I usually pack along a plastic spoon.

Sugar snap peas. I buy them packaged rather than in bulk because they are fresher, crisper, and not so tough, but you may have a different experience. I snip off a tiny corner from the bottom of the bag and then open the package at the top and run water through to rinse them. Again I like them with a little dash of salt.

Baby carrots. Crunchy, tangy-sweet, and always ready to go just as they are.

I slice up cucumbers, zucchini, celery and carrots into sticks and carry those around. I’m an omnivore, but I like veggies.

hummus and avacado on bread….like half sandwiches..yum. :D
yogurt w/grape nuts sprinkled in it…more yum. I bring a little contaner w/the cereal to sprinkle in when I open the yogurt.
pretzels and peanut butter.

@gememers That’s the site’s generic picture. I haven’t come across one that captures what I want. And granola is way better than rice cakes, rice cakes rate right up there with cardboard and drywall.

@Adirondackwannabe: Yes, they taste like cardboard sometimes and definitely the first time you try them, but they can grow on you, and are pretty filling if you are hungry and need something to fill you up fast.

@Zajvhal I do like avacodo but I usually don’t use the whole thing because half of it is brown. I love grape nuts and I was thinking about getting dry cereal to snack on. Hummus is always good.

@ Adirondackwannabe On a lighter note, my kids used to be so extremely picky eaters. I finally fixed them though. We were re-modeling, and I put a piece of drywall on each plate with a dollop of ketchup in the center, and called them to breakfast.

Mmmmm! Drywall and ketchup! Now don’t that sound good! It’s been a family joke for decades.

@Siren @snowberry I tried to come up with a good comeback, but I could not. I guess I’ll go have a drywall and cardboard sandwich, with ketchup.

I am so excited that the summer fruit is coming!

I could LIVE on strawberries, watermelon, cantalope, plums, cherries!

Yes, peanut butter and celery is great so are tomato sandwiches on lightly toasted bread.

Also pickles..I can devour dills and bread & butter chips…mmmm!
