I have eaten them 2 months after expiration and lived to tell about it.

You know they are spoiled when they smell or look odd. Sometimes you have to crack it open to tell.
I buy them at Costo two dozen at a time. They last for about a month.

Everything you every wanted to know about egg safety is here

The expiration date is actually a “to be sold by” date and can’t exceed 30 days from the eggs going in the carton. All of this assumes the eggs were refrigerated the ENTIRE time and that can be a major assumption if you follow egg production from the back end of the chicken to your plate.

Eggs last significantly longer than their expiration date. You will know if an egg is no good the moment you crack it open. Like @worriedguy, I basically just eat them unless they smell off (cooked, of course—if you are doing something with raw eggs, you want them as fresh as possible). This method hasn’t killed me, nor has it ever given me an upset tum.

If you cover the outside of the eggs with Vaseline they will keep for up to three months. To test if the eggs have “gone off” just drop them in some cold water. If they stay on the bottom they are fine but if they float just off the bottom it would be best not to eat them.

A trick to determining the freshness of eggs is to look at the yolks when cracked.

A fresh egg will have a round dome to it’s yolk where an old egg ( not bad, just not fresh ) will have a yolk that flattens out when cracked.

I have had fresh eggs for years from my hens and they keep at least a month of lobger in the fridge and retain their freshness.

Store bought eggs are already several weeks old by the time you get them usually, so I’d use them within 2–3 weeks for maiximum freshness.

@philosopher Odd, heck. The smell will ruin your day.

@Nullo
Yes you are most certainly correct. It only happened to me once. We have to refrigerators. I learned from my mistake.

Don’t eat the one’s with black yokes! :-/
I’ve eaten eggs a moth past the date, they’ve been ok! :-/

If it stinks to high heaven when you crack it, it’s off. If it doesn’t smell bad, it’s fine. I think they’l keep up to 6 weeks. Those best-before dates are always on the side of caution. Of course they want you to throw away perfectly good food and buy more.
