What is your most-liked type of mole sauce, any recipes to share?

There are many different mole varieties: http://en.wikipedia.org/wiki/Mole_(sauce)#Types_of_mole
Specific moles are used with specific meals (at least in my ideal world).
I have only tried a few and I am ready to try some more! What ones do you find yourself craving and what do you like it paired with? Have any recipes?

Star-nosed Mole sauce is my favorite. I’m trying to branch out into different small mammals, though.
My favorite is the dark, sweet mole. As far as recipes…hahaha. There are few people who can truly make a good mole, most Mexican restaurants don’t get it right. Though I might be biased due to my Mexican heritage.
@tinyfaery Sigh, you confirm my fears. The dark sweet one’s I have had to date have left me thinking “Surely there is a better way to do this or maybe I am trying the wrong ones.”
Anybody have an abuela who is a cooking goddess and likes having new faces for dinner?

The only mole sauce I ever had was made by Knorr and came in a jar. I don’t know how authentic it is, but it was okay for me.
Sounds like a perfect reason to try and make some of your own and experiment with what you might think is good. It seems a bit too complicated for me to try at this time, though.
