What's the weirdest thing you've ever fixed yourself or your family for dinner because you decided to "make do" with what was already in the house?

Where on the continuum from barely edible to surprisingly good did it fall?

On days like that, everyone in my house usually gets something different. I always have backup organic chicken nuggs in the freezer and veggie burgers. So, we’ll just fix whatever we want, individually and clean out the fridge for sides. I kind of like those nights because my cooking is minimal.

I made sugar glazed carrots once. My roommate at the time got ticked when he got home because he hates carrots and it smelled like apple pie.

I once baked Spaghetti Os in a hollowed out loaf of french bread with feta cheese sprinkled on top. It was very, very good and now I make it on occasion with regular pasta and sauce.

@Sueanne_Tremendous Not a combination I would have thought of but that’s kind of what I was looking for. Things attempted out of desperation that either failed miserably or triumphed. Yours triumphed. I’m still not sure though, if I’d be willing to try it myself. :) Spaghetti Os and feta cheese? It would take some convincing. :)

I was drunk and 19. All I had was BBQ sauce and tortillas. I tried making a quesadilla with the sauce instead of cheese. It should be obvious how that turned out.

@johnpowell I guess that would be one of the meals that would be on the lower end of the “edible” continuum. :)

Feta goes with everything!

I also once took a can of green bean and blended them in a food processor with packaged tuna and mustard and put the resulting “hash” on tortillas with some melted string cheese. Also not too bad but haven’t made since.

The last one I can think of was when we were damn near out of everything so I scoured the freezer and cupboard and came up with frozen mussels, a box of couscous and potato chips. I crunched up the chips and laid them in the bottom of a pan and then sprayed with olive oil. I made the couscous and spread on top of chips and then laid the shucked mussels on top of the mess. I know I threw some seasoning on and/or some salad dressing and of course some cheese (I know, I know cheese cheese cheese but we live in Wisconsin). I baked for about 30 minutes I think just until the mussels were done. It was pretty tasty but I like pretty much anything.

This is a fun question!

In the summertime I’ve come up with some weird sounding or odd looking combos for myself when it was just too hot to cook.

I had some previously roasted beets in the fridge and an Avocado. So I peeled the beets and diced them fine. The Avocado was in larger chunks. There was a miniscule amount left in one of those little plastic lime juice thingies as well as a lemon on its last legs. Combined with some olive oil and orange juice, it made a tasty sort of vinaigrette.

Mixed it all together with the beets and Avo. and let sit in the fridge to marinate for awhile. Looked really weird but tasted really great.

I’ve also been known to take either canned or frozen peas and combine with sour cream and some Blue Cheese crumbles. Quite delish.

I’ve also done the SC and Blue cheese with either roasted or canned beets. I do that frequently in summertime along with some fresh corn

That is one weird but great meal complete in itself. Obviously the roasted beets are better, but canned will do in a pinch.

It wasn’t until much later that I read about the combination of Blue Cheese with beets being a very classic combo for salads.

What really puts it over the top is when I can find Gorgonzola Dolce cheese. It’s an Italian import so hard to find, but the most incredibly great tasting Blue cheese EVER.

Only place I’ve ever found it is Whole Foods and it’s a bit of a trip from where I live now.

But that plus roasted beets needs nothing else. A delicious meal in itself.

If you’re a stinky cheese lover, as I am, you have to try Gorgonzola Dolce. Nothing else like it in the world.

And for the few weeks at the end summer when fresh tomatoes are abundant at farmers markets, I will have tomato and mayo sandwiches for every breakfast, lunch and supper. Not exaggerating at all. Occasionally add a slice of Muenster or American cheese but that’s it for weeks on end till I’m satiated enough to carry me through to next summer/fall.

Yes, I already know I have weird and quirky food tastes, no need to tell me just exactly how weird :D
