What recipes for a watermelon?

We cut open a watermelon relatively late and now it isn’t particularly sweet. Not sweet enough to eat alone but not bad. Got any recipes for using it up?

Batido de Melon: Watermelon, sugar and ice in a blender, blend until iced is fully crushed. Yum.

Grilled Watermelon Salad
Brush some slices with olive oil and grill for just a minute or two. Dice into cubes and mix in some good goat cheese. Drizel with honey. Serve over romaine. Sprinkle with slivered, toasted almonds.
Pour Auslese into the melon and let it set for a couple of hours. Even better for cantelope.

Homemade freezer pops. Blend watermelon (minus seeds), corn syrup and a teeeny bit of vanilla. Freeze and enjoy.
I usually blend mine up with cut up tomatoes and bananas, and maybe some oranges.
I like my watermelon chilled and straight up.

Watermelon lemonade! Put pieces of watermelon in a strainer, smush to get the juice out, add to homemade lemonade.
I just read in Sunday’s Parade magazine that you can drizzle slices of watermelon with honey and lime juice. dissolve the honey in the lime juice and drizzle, my nizzle!
Last night I put out a huge half of watermelon that was a bit mushy since I was working out of town all weekend.
