Why does rotten fruit taste like booze?

Asked by saservp (291points) July 21st, 2010

Particularly I’m eating a blueberry, and the rotten pieces in the bunch literally taste like a tiny vodka shot haha

Basically bacteria and or yeast is converting the carbohydrates (sugars) inside the fruit into ethanol.

Essentially you could let blueberries ferment and then distill it, thus allowing the alcohol to evaporate then capture and condense it; do this 2 or 3 times, add some water, and you have blueberry vodka.

Note: consuming food that is improperly fermented can lead to botulism

Because some of the fruit sugar has been converted to alcohol.

it has started the boozing process. it is turning into blueberry wine.

@saservp I recall seeing a clip on TV many years ago now of monkeys under a tree getting drunk eating its fermenting fruit that had fallen to the ground. This was an annual event, and hilarious! I think they must have looked forward to it.
