What is pepperoni made from and can you buy a substitute?

I know pepperoni is very popular and I used to like it before I became a little sensitive to sodium. How is it made?

It is made with cured pork and beef thats then spiced. As salt is used to cure the meat I doubt that you can make it with out salt.

^And you can buy turkey pepperoni. I heard it tasted pretty good.

I look through a couple of books tonight and see if I can find anything. I’m a pepperoni lover, so it’s sad you had to give it up.

Order your favorite pepperoni dish, then pick out 90% of them. Save the rest for the last bites of the entree. That’s what I do these days. Might work for you too.

hmm I will look for turkey pepperoni for this winter (winter; you know? The season when the air is cold? When it snows, remember?). Thanks!

Still looking. It’s cured with sodium nitrate, so the sodium is still going to be a problem. Someone has got to have tried this, so I’m not giving up just yet.

Stores like Trader Joe’s and Whole Foods have nitrate free products. Maybe that will work?
