I have been reducing my meat intake (my cholesterol is way down, yay!) and my new thought was to make a meatloaf or burger with half the meat. Kind of combine a veggie recipe and my meatloaf recipe so hopefully the flavor and texture is not very different from regular meatloaf.
I am interested in your favorite vegetarian recipes for this sort of thing, and then I will experiment a little. I looked up some recipes, some used potatoes some rice, some lentils, but it would be great to hear from the collective your favorites.

I find this recipe is excellent:
Tofu and Mushroom Nut Loaf
Ingredients:
2 eggs
1 tablespoon soy sauce
350g tofu
¾ cup chopped nuts (I use half & half almonds and sunflower seed)
1 packet onion soup mix
1 tsp oil
1½ cups finely chopped onion
½ cup finely chopped celery
2 cups chopped mushrooms
1½ cups fresh wholemeal bread crumbs
Directions:
Mix eggs, soy sauce, tofu & onion soup mix together in blender. Add nuts & blend until smooth. Sauté vegetables until onions are transparent. Add herbs/spices while vegetables are frying. Mix blender ingredients, cooked vegetables & vegan bread crumbs together in a large bowl. Press into a well-oiled loaf pan (you could line with baking paper). Bake at 350 degrees F for approx 60 minutes. Let cool slightly. Turn loaf out and slice. Serve with miso gravy.
How can it be “meat“loaf, without meat? That would be like making macaroni and cheese without pasta or dairy products. Give it a respectable name, and you can invent your own recipe.
@josie That is what it is called.
I have a fabulous recipe for cashew nut loaf. I’ll look it up for you. I sent it to agagio- wonder if she liked it.
Use Quorn as a substitute. It’s virtually fat-free.
@faye that sounds good. My husband loves cashews.
