What veggies and meat would you use if you were going to make a stir fry?

My dad makes this awesome stir fry with chicken, broccoli, carrots, snow peas, baby corn, and string beans. I beg him to make it for me every time I see him.
Basically I would use any veggies I have stashed in the fridge (carrots, string beans, green / red bell pepper) . If I have bamboo shoots in the cabinet, I throw them in. Chicken meat (I think it cooks faster).
Thinly sliced beef but really , I think what makes the dish are the seasonings. Not the vegetables. After browning the beef which makes the whole thing taste much better I’d use lots of minced fresh garlic, minced ginger root, some red pepper flakes and soy sauce. Then for the veggies I like cabbage, scallions, bell peppers thinly sliced, snow peas if you can find them and some julienned carrots. Pour in chicken broth and soysauce in which you’ve dissolved 2 teaspoons of cornstarch after everything is cooked al dente.
My dad usually uses bean sprouts, water chestnuts, bamboo shoots, tofu, beef, broccoli, snow peas, baby corn, carrots, and sometimes celery or bok choy.
I’m not a big fan of bell pepper, but I know they’re common in stir fries. Also, it doesn’t always have to include beef. But always tofu. :)

That’s the beauty of stir frying. You can dump anything in there, really.
Beansprouts, bell pepper, baby corn, carrot, mange-tout (no idea what you call these in the US – they’re like small flat pea-pods, you eat the whole thing, pod as well). And some really nice big whole shrimps.

I’d use bean sprouts, Chinese mushrooms, bamboo shoots, water chestnuts, soy beans, snow peas, red and yellow peppers, bite-sized broccoli, Chinese cabbage and chicken.
