General Question

Best way to rip DVD's and keep their quality?
If some of you remember from my last question you will know I recently got a server computer, so I was planing to use it as a media server and a web server.
What would be the best format to rip my DVD collection to, that would be small enough to stream wirelessly to a Boxee Box, but keep quality good enough to view on a TV?
