What is the difference between pudding in the refridgerated section and pudding in the non-refridged section?

My mum asked me to get her chocolate pudding, and I noticed that there was some in the refrigerated aisle, and some that was in the non-refrigerated aisle with things like cake mixes… so what is the difference?
