Do you have a recipe for cauliflower, coconut milk and coriander soup?

Asked by gailcalled (54647points) October 4th, 2010

I had one that I loved. It was easy, fool-proof, delicious and used only fresh ingredients. Of course, I lost it. Did I, perhaps, post it here?

Could this be it, my dear?

@Jeruba, I, Milo, my family and the great turtle in the sky thank you. (I did poke around in old “recipe” questions but missed mine.)

@gailcalled That looks delish! I am going to give a go.

@mama_cakes: I have been using canned coconut milk from Thailand. After the soup is made and chilled, the coconut oil congeals as a layer of fat on the top (as chicken fat does in chicken soup). It is easy to remove with a slotted spoon.

If you don’t mind the calories, it is tasty without skimming.

But I am going to check out low-fat coconut milk. I have seen it in bottles, to be used as a substitute for milk in cereal, etc.

@gailcalled, you missed the obvious (easy to do sometimes when your vision is calibrated for subtlety). I just used the search terms ‘gailcalled’ and ‘cauliflower.’ For once our search didn’t let me down.

Guess what I just made for supper! Yummy! (sans cilantro – not my favorite)
