What are your favorite vegetables?
Mine are carrots, broccoli, and tomatoes.

Asparagus. I would eat it every day if I could.
I like any cruciferous vegetable, especially broccoli and spinach.
Carrots, garlic, onions, shallots, kale, collard greens, spinach, potatoes, sweet potatoes, various squashes, fresh peas.
Maybe others I’m not thinking of.
Asparagus, Swiss Chard, artichokes and carrots.
Mushrooms of all varieties.
Tomatoes, green beans, corn, celery, cucumbers, carrots, garlic, fresh crisp peas.
ooops…I think tomatoes are a fruit
So are cucumber, green beans and peas. . . but don’t tell anyone.

@ragingloli I like red powdered paprika on rotisserie chicken.
Carrots, string beans, broccoli, pea pods, edamame, corn, peas, delicatta and butternut squash, sweet potatoes.
Either steamed/lightly boiled with a bit of real butter or roasted with some olive oil and salt & pepper. Fresh and in season preferably.
Lettuce. No disputing it when you see my salads that appear nearly every day.
NEVER met a potato that I didn’t LOVE!!! Although I’m not sure it’s a favorite, I get excited over creamed style corn although I do enjoy some whole kernel corn every now & again. Pickled beets are enjoyed as a side every so often. Still, if I was told that I could only eat 1 veggie for the rest of my life, it would be a potato of one form or another!!!
I combine a can of whole kernel corn with a can of creamed corn. Just great!
I do not like any of the starchy vegetables! So no peas, beans, corn, etc for me! But I love broccoli and carrots, mushrooms, the various salad greens, and I do like potatoes, so I guess I have to retract what I said about starchy vegetables.
Oddly, I was only thinking about cooked veggies when I responded. I do love baby spinach, lettuces (romain, bib), black olives (pearl, calamatta), shredded carrots, and cucumbers quite a bit too — ya know, in a salad environment.
Cookies are my favorite vegetable.

Ok, I forgot artichokes, and mushrooms and olives, if those count as vegetables.

@ragingloli for years, I could not stand sweet pickles and in general, I still don’t like them. I’m a dill pickle girl all the way! But years ago, one summer we had a bumper crop of cucumbers and so my mom decided to learn how to make pickles. She may both sweet and dill, and I tried one of the sweet ones and they were delicious! I still don’t like store-bought ones but I always liked hers!
