How can we eat baby corn cobs, and not corn on the cob?

I know that when cooked properly, you can eat both the corn & the cob. I’ve NEVER tried to eat the cob without the corn. So, I’m NOT going to be much help here!!! Oh well, I’ll keep thinking.

Baby corn cobs are pliable and soft. Once they mature, they aren’t. Just the way it is.

Eating baby corncobs seems wrong. The corn has not reached its full potential as a mature living ear.

@elbanditoroso I thought that baby corn was another species of corn? It would be a waste if corn was picked before maturity.

It would be reasonable if the corn was harvested young because of weather snafus. (Hail, drought, )

Many plants have points where young parts of the plant are tender whereas as they mature it becomes tough. Same here. The cob of the baby corn is smaller in diameter and doesn’t have as much roughage in it as opposed to the adult corn. You COULD eat an adult cob, you’d just have a hard time chewing it.

Similar to eating the bones and all in small fish like smelt, sardines, etc.
